TURKEY MEATLOAF

1 TBSP olive oil

2 Celery stalks, finely chopped

1 small onion, finely chopped

2 Cloves garlic, finely chopped 3/4 Teaspoon of ground cumin

1/3 c medium or hot salsa

1 LG Eggwhite (no egg yolks)

1/2 Teaspoon salt and 1/2 tsp pepper

Stir fry celery and onion til tender over medium heat. Set aside in a bowl cooling and add garlic and cumin. Let stand 10 minutes before removing from the pan. Makes 7 servings. Each serving: 180 cal, 26 p., 9c, and less than 4 grams of fat. Enjoy.
